Only with the advent of modern analytical techniques, particularly gas chromatography, have we fully appreciated the complexity of these mixtures. With gas chromatography, an oil is separated into its components, and the relative proportions of the components are represented graphically as a series of peaks—some large, some small. The area under each peak represents the proportion of each component in the oil, and by experience, structural analysis, and comparison of the chromatogram with others made with pure reference chemicals, we can identify many of the components. Next time you touch and sniff an herb, remember that your nose is being bombarded by a wide array of chemicals. Essential oils are found in various plant parts. The oils of peppermint, patchouli, basil, and geranium come from the leaves and stems, clove oil comes from flower buds, and oils of jasmine, rose, and tuberose come from the open flowers. Some plants produce more than one type of oil. Cinnamon is just as versatile, supplying different oils from its leaf, bark, and root. Essential oils are secreted and stored in specialized structures. Members of the mint family—sage, basil, thyme, rosemary—have two types of epidermal oil glands. The first is a two- or three-celled glandular hair, the second, a larger, ten-celled glandular scale. The latter can be seen with the aid of a hand lens, particularly on the calyx the tube from which the flower emerges. The scanning electron microscope reveals a surrealistic landscape of pincushionlike glandular scales and teatlike glandular hairs. What are essential oils?

Floral hydrosols are a by-product of making essential oils. Essential oils are distilled from plant material using an essential oils still. The essential oils come off the top of a floral water or hydrosol. This hydrosol contains many of the water soluble components of the flowers or leaves and can provide therapeutic and aromatic benefits. Essential oils are the concentrated oils found in leaves and flowers that are responsible for their fragrance. They are highly volatile and evaporate into the air easily. They degrade in bright light. This is why they are sold in dark glass bottles with tightly capped lids. They are usually used by the drop rather than by the spoonful. Essential oils are separated from the plant material through steam distillation and carefully handled to assure the maximum yields. Steam distillation of flowers and leaves gives two products — the essential oil plus a floral hydrosol. Different plants have different yields of essential oil per lb. Less expensive essential oils, like peppermint essential oil , need less plant material to distill for essential oil — 5 lbs of peppermint leaves will yield 1 oz of peppermint essential oil. The rest of the distillation is peppermint hydrosol, useful as an air freshener, insect repellent, and in an aromatherapy diffuser. You can distill essential oils at home from your own garden plants — but be warned that the yield of essential oil is quite small compared to the yield of hydrosol. With some plants, like roses, you need such a large volume of plant material for a very small amount of essential oil that special equipment is necessary to handle the volume. The directions given here will let you create a hydrosol with a small amount of essential oils in it. You will use improvised equipment from your kitchen, so no specialized equipment is necessary. Hydrosols are herbal essences and distilled water. They will keep indefinitely if stored in sterilized bottles and protected from light and heat. You can use them as air fresheners, skin fresheners, hair rinse, in cooking, in cosmetics, and in homemade cleaning products. You can use the hydrosol directly in your electric ultrosonic essential oil diffuser, without adding any additional essential oil or water.
